This month we are making all kinds of sandwich combinations. Check out Alessa’s wonderful Pineapple Mango Chicken Pita. Can you tell we love fruit here at Carolina HeartStrings and what better time of year than strawberry picking time to be creative? I used some of the wonderful strawberries I picked last weekend hanging around in my fridge and thanks to Pinterest (check out our wonderful boards) and similar recipe for a panini using raspberries, my strawberry creation was born!
8 ounces Brie cheese
4 teaspoons honey
1 cup strawberries, sliced
4 teaspoon pecans, chopped
8 slices Italian or sourdough bread
4 teaspoons butter
Slice the Brie into equal sized pieces and divide them so that you have enough for 4 sandwiches. I used approximately 4-5 pieces per sandwich. Place the Brie on one slice of bread. Drizzle 1 teaspoon of honey over the Brie. Sprinkle 1 teaspoon of the chopped pecans on the honey and Brie. Place 1/4 cup of sliced strawberries on top of this mixture. Top with a slice of bread. Butter each side of your sandwich with butter (approximately 1/4 teaspoon per side) and place on your panini press and cook. Cook until the bread is golden brown and the Brie is completely melted. Makes 4 sandwiches.

Oh yes – you just can’t beat the combination of Brie and strawberries! I’ve added chocolate into a Brie and strawberry panini before and it makes a great dessert treat.

You can use a grill that has a top and bottom, such as a George Foreman if you have one. Just something that has weight and you can press down on the sandwich with. Just until you can get yourself the real thing! Good luck.
