Nothing says yummy goodness to me like a big bowl of pasta and this month we are reworking some of our favorite dishes into something a little bit healthier. One of my new favorite foods that I love to add to salads and even eggs is an avocado. This particular “pesto” would be so tasty used as a spread on a sandwich, in a wrap or over your favorite pasta. If you love avocados you will enjoy this pesto!
1 medium sized avocado
1 tablespoon minced garlic
1/4 cup fresh basil
1/2 tablespoon olive oil
1/4 cup Parmesan cheese, shredded
Combine all ingredients in a food processor and blend until you have achieved your desired consistency. Use this pesto on your favorite pasta, sandwich or wrap! Makes approximately a 1 1/2 cup serving.
