My last recipe for our month of healthy alternatives to favorite foods is one that created itself. Using ingredients that I had on hand I came up with this tasty treat one Saturday for lunch. It was easy and satisfying and tasted wonderful.
1 teaspoon olive oil
1 1/2 cups frozen spinach
1 garlic clove minced
1 teaspoon sea salt
1 teaspoon black pepper
1/2 cup crumbled feta cheese
1/4 cup shredded Parmesan cheese
10 sheets Phyllo dough, thawed
Heat olive oil in skillet. Saute spinach and garlic for approximately 10-15 minutes until the flavors begin to meld and the water is cooked out of the spinach. Remove from heat and mix in the feta cheese. Spray a small (8×8) casserole dish with cooking spray. Lay 5 of the dough sheets in the bottom of the dish. Place the spinach mixture in the middle of the dough sheets sprinkle with the Parmesan cheese. Place the remaining 5 dough sheets on the top. Fold the edges of the bottom layer of Phyllo dough over the top edges of dough and roll/pinch to seal. Bake in a 350 degree oven for approximately 30 minutes or just until the dough begins to crisp up and turn golden brown. Serves 2.
